Regular lard is usually rendered from pork belly fat or back fat, which gives it a porkier flavor and more yellowish color (think bacon grease!). In contrast, leaf lard (豬板油) is rendered exclusively from fat around the pig’s kidneys — there are no meat/muscle tissues attached. Leaf lard is considered the purest and highest-grade lard, with a very mild, neutral flavor profile that makes it ideal for baking.
Unlike regular lard and other animal fats such as beef tallow, which impart flavor and work mostly with savory dishes, leaf lard’s versatility makes it great for sweet or savory, high heat or low heat, stir-frying, sautéing, frying, baking, etc. — the uses are endless! Its high smoke point of around 400°F makes it especially suitable for high-temperature cooking.
